Hibernal Stara Parcela is an aromatic Polish natural white wine from Lower Silesia, Poland. It comes from the village of Jakubów, where one of the St Jacob's pilgrimage routes passes on its way to Santiago de Compostela. Here, Michał Pajdosz runs a four-hectare vineyard planted on a south-facing slope.
Hibernal is a highly aromatic grape variety, with Riesling as one of its parents, and this wine is a great expression of the variety. It is non-vintage, made from a blend of reserve batches from several vintages. Produced in very small quantities, only a handful of bottles are available.
